Do they care if I recently got hired with a fully remote company? Asking because I need to provide the work contract and I’m wondering if the recent hire date would cause any doubt or further questioning.

No. Same documents but your company has to fill it too. As soon as you dont have thai clients

No but you will need a letter from the company specifically stating you are allowed to work remotely from Thailand, just remotely is not enough. It helps if it also states you will not work with any Thai entities or clients inside Thailand

no they dont care how new your contract is aslong you show you can take care of yourself until you get money from the job

The job needs to be remote not the company. Recently hired is unlikely to be an issue.
