TLDR : Answer Summary
When arriving in Thailand on an Education Visa (Ed Visa), Immigration typically does not require a return ticket. However, it is noted that airlines may sometimes ask for proof of onward travel, even though such a requirement is not enforced by immigration officials.
but since it's not required, the discussion evolves differently than in case they would be correct. You can tell them it's not required and ask them to double check with their supervisor if necessary.

An education visa is a non-immigrant visa and therefore has no requirement for proof of onward travel.

Isn't it the case that if you have ANY visa in your passport then a return ticket is not required?
that is correct. It's no longer published as such by IATA but I don't think the actual rule has changed.
But keep in mind that proof of onward travel is required for the visa application instead when getting a tourist visa. So proof of onward travel is required (at any stage) whenever you come as a tourist. An embassy can however decide to still give you a visa even without proof of onward travel, they have discretionary right on it.
but as it's not required, even if the airline does check, it just means they made a mistake and you can just tell them that. Then they'll have to let you board. Asking them serves no purpose either.

Your return air ticket will be scrutinised by your flight airline on boarding. Immigrating seldom check flight return ticket unless you are determined to have utilised tourist visa to stay in Thailand for too many times in a year and depending on office u visit.
