TLDR : Answer Summary
A dual national (Thai/British) traveling to Thailand on a UK passport can enter under the visa exemption rule for 30 days. If she plans to stay longer than 30 days, she can apply for an extension at the immigration office in Thailand, using her Thai ID and house book to secure a one-year extension for 1,900 baht.

She will be considered a brit when she enters thailand and will get a 30 day visa exempt entry.

She can go to the immigration office and apply for an extension based on being a thai national who entered the country on a passport from another country. She shows her thai i/d and house book listing and will get a year extension for 1900baht.
