TLDR : Answer Summary
You need to cancel your education visa extension at the immigration office before leaving Thailand, as some land border checkpoints may not permit exit without cancellation. After cancellation, you can return to Thailand on a visa-exempt entry or a tourist visa, depending on your nationality. Additionally, it's advisable to check if you need to spend a day or two in Laos before re-entering.

Yes, I did this for a few years. As the other commenter mentioned, make sure to cancel your visa at immigration before you leave Thailand. Also, you might be required to stay in Laos for a day or two before being allowed back into Thailand.

You have to go to the immigration office that issued your extension to cancel current exntension based on studying before you head to a land border. Some land border check points don't let you leave Thailand with uncanceled extension based on studying.

Then you will be able to enter Thialand on visa-exempt or tourist visa depending on your nationality.

No rule on maximum stay in Thailand regarding only immigration regulations.
