Just read this article (sorry, it is in French). The author seems to think that when you re-entre the country after your 180 days, you will be asked to justify the 500k in your account again.

Is this your experience?

Do we really need to have bank statements with us every time we get back?

Franchement j’y crois pas du tout. J’ai eu mon DTV et on verra néanmoins ce qu’il en sera. Dans tous les cas j’aurai toujours -sauf imprévu- les 500k bahts.

They are not asking now, but they might change the rules and ask for proof every year or two, so better to be aware this can happen.

As others have said, it is possible but unlikely. I'd certainly not keep an account with a few measly baht, wouldn't be shy to show a few hundred thousand short of 500K in an on the spot interrogation. It's an amount to obtain the visa, nothing is saying it has to be maintained for an entry.

So far, there is no history of checks for this visa type. However, keep in mind that immigration authorities conduct document and skill checks for other visa categories and could potentially choose to do so for the DTV at any time. While there is no precedent for this yet, it is more prudent to assess future risks rather than base your opinion solely on the short history of this new visa.

Not so far , there’s plenty been in and out over the last few months.However if you want to extend the initial 180 days by a further 180 days at an immigration office they can ask for anything they choose such as bank accounts updated, Muay Thai course renewal etc
