End of February we weren't asked anything by Immigration (we had last entered 11th December for 2 weeks) on a 30 day visa exemption - British passports. However, both times the airline asked to see our onward ticket and noted this on their system.
They CAN ask you. They generally DON'T ask the "casual tourist" but will ask people with a history of back-to-back entries. That said, for even "casual tourists", just because they "usually don't ask" doesn't mean they can't.
As a rule IF they're going to ask for anything, they ask for proof of funds (20K baht or the equivalent) BUT they can ask for proof of onward travel and a hotel reservation IF they want to.
