TLDR : Answer Summary
While it's not always required to show proof of onward travel for a 30-day visa exemption in Thailand, it can be requested by immigration officials, especially for individuals with a history of frequent entries. Some travelers have reported being asked for an onward ticket or accommodation details, while others noted that airline staff often check for these documents prior to boarding. It's advisable to be prepared with potential proof, such as an onward flight ticket or evidence of sufficient funds.

Oddly, I was asked in Bangkok 1 month ago for a return flight and hotel booking but not for proof of funds...

End of February we weren't asked anything by Immigration (we had last entered 11th December for 2 weeks) on a 30 day visa exemption - British passports. However, both times the airline asked to see our onward ticket and noted this on their system.

The airline staff ask at the airport. Immigration may want to see funds only.

They CAN ask you. They generally DON'T ask the "casual tourist" but will ask people with a history of back-to-back entries. That said, for even "casual tourists", just because they "usually don't ask" doesn't mean they can't.

It has way more to do with your previous entry history than anything else. I'd say be prepared and then you won't be caught out IF you're asked..

As a rule IF they're going to ask for anything, they ask for proof of funds (20K baht or the equivalent) BUT they can ask for proof of onward travel and a hotel reservation IF they want to.
