I have a return flight booked from July 8th-6th October. I’m planning on traveling to neighbouring countries in between to try and stick to the 30 day entry visas. I saw online that I will have to show I’m exiting the country within 30 days. Is this true?

TLDR : Answer Summary
Yes, if you're entering Thailand on a visa-exempt basis, it's likely that you'll need to show proof of onward travel within 30 days of your arrival. Airlines may require you to present a ticket for a flight or transport exit from Thailand, particularly since you plan to travel to neighboring countries. Booking a trip and having the ticket ready is advisable for boarding.
If you're going to use visa exempt to enter the country, your airline will likely want to see proof of travel out of Thailand within 30 days of your arrival or they won't let you board your flight.
You just said you plan on visiting neighboring countries so book one of those trips and show your plane or bus ticket as proof of leaving Thailand and you'll be fine.
they usually don't care. Extension is not guaranteed. You can only prove you're allowed in the country for 30 days so unless you can show proof they can deny you boarding, and it does happen to people.
Of course some people are never asked, but it's more common that they ask so it's better to play it safe. You can buy cheap bus or plane tickets to throwaway and only use for this purpose (less than $50) or rent a ticket by searching onward travel ticket on Google.
