I am going to Asia for 80 days soon I will be flying into Bangkok where I will get 30 days voa I plan on going to either Vietnam or Cambodia to break up the trip but I'm not sure where, I was going to book flight after I arrive,will they give me a hard time at immigration if they see I have a 80 day return ticket or do I need to show that I am leaving by the 30 days

I suggest going on book a cheap flight with either Airasia or Vietjet to either Cambodia or Vietnam. (HCMC, Danang or Hanoi have international arrival to Vietnam. from Bangkok, Chaing Mai or Phuket

I have been asked once by the airline flying me, as well as once by Thai immigration. Both pre Covid though. As I wasn't staying over a month anyway, I had them booked already.
You may as well book one of your excursion flights now. Just in case.
Short haul you might get away with it. I dont know any long haul airlines letting you board without return/onward travel unless you have a long term visa/extention of stay or re-entry permit.
It’s taking a gamble but if they require an on board ticket you have a phone in your hand just book it that’s what I did when I went to the Philippines and they required me to have it I just booked up within 10 minutes just get to the airport a little early…. Or a book a ticket That is refundable
I always use Orbitz, book a flight and cancel within 24 hours with full refund guaranteed. That way I always have a ticket at hand. Of course you have to make sure your flight does not take the full 24 hours....
