I am soon going to apply for a Non O 90 day visa. Do I need to show that I have health insurance? Or can I get the visa and then apply for health insurance once I'm it Thailand. Right now I do not have health insurance here in the USA.

TLDR : Answer Summary
You do not need to show proof of health insurance when applying for a Non-O 90-day visa. It is possible to obtain the visa first and then secure health insurance after arriving in Thailand.
