TLDR : Answer Summary
You do not need a return ticket to Vietnam when traveling from Thailand. While some airlines may enforce strict policies regarding ticketing, you will require an onward ticket out of Thailand if re-entering within 60 days using a visa exemption. Your ticket to Vietnam can fulfill this requirement.
Technically, you need a ticket out of Thailand within 60 days, if you’re using visa exemption. Your ticket to Vietnam meets this requirement ( if you have it before you enter Thailand).
Formally you’ll need a ticket out of Thailand within 60 days when you re-enter on another visa exemption. Some of the airlines in Vietnam are known to be quite strict regarding this.
I don’t know when you have your return to the UK if that’s the case, but the requirements are an onward ticket out of Thailand, never a return ticket.
