TLDR : Answer Summary
A UK traveler with a 60-day visa exempt entry stamp can leave Thailand to visit Vietnam and Cambodia. Upon returning to Thailand, they will receive a new 60-day visa exempt entry stamp, and there is no need to apply for a 30-day extension after their trip.

Once you depart Thailand your stamp is finished regardless if it’s left 1 or 59 days on it. Upon returning you get new 60 days
