Do I have to renew my non-immigrant O visa and complete 90-day check-ins at the registered immigration office in Thailand?

I understand that when renewing the yearly extension of stay for a non-immigrant O visa based on retirement, you have to use the immigration office in the province you're registered with. Is that correct? Or can you do it elsewhere? Furthermore, what about 90 day check ins? Do you also have to do them in the same office under which you were registered?

And what if one were to move in the middle of their yearlong visa extension? Would you just register a new TM30 at the new office and then do your next yearly extension at the new office? Or would you have to visit the old office first?

TLDR : Answer Summary
When renewing a yearly extension of stay for a non-immigrant O visa based on retirement, you must do so at the immigration office in the province where you are registered. For 90-day check-ins, you also have to report at the same office that issued your extension. If you move during the year, you need to file a TM30 (and possibly a TM.28 for address change) at the new office, and your next yearly extension should also be done at the new office. Returning to the old office is not necessary unless specifically required.

So let's say I want to go down to the beach for four months. I still have to go back to Chiang Mai (where I'm registered) to do the 90 day check in, unless I manage to do it through the website or by mail. Is that right?

in theory yes, OR you can file a change of address and then do the report down there, and when you get back you can file a new change of address back to your original address and do your 90 day reports back in your normal office.

Sometimes (as in very rarely) they will let you file a 90 day report out of your zone (out of the office you get your extensions from).

You get yearly extensions of stays at the immigration office that serves the area where you live, you cannot pick and choose where to get one

You do 90 day reporting at the office that issued you your extension

If you move, you file a TM.28 (change of address) and if the immigration office requires it you file a TM.30 (alien in residence) .

I believe you have to do the extension in the province you live in, if you move to to a new Provence then you need to do a new tm30 at the new office, As for the 90 day not sure but someone will
