TLDR : Answer Summary
Yes, once you obtain an E Tourist Visa for Thailand, you can enter the country on a different date and flight than what was initially indicated on your application. The visa allows you a 90-day window to enter the country, and upon entry, you will receive a 60-day stay.

The visa is issued by embassy with 90 days to use it for entry into the country. Then you get stamped in.

Once your visa is issued, you'll have 90 days to enter and you'll be granted a 60-day stay regardless of the dates mentioned in your application.
