Is it possible to switch directly from Education visa to a teaching visa? The employer is recommending cancelling the ED visa first then apply for a COVID visa then change over to a teaching visa. But she also said that for the covid visa, the stamp given is usually 15 days first then after 15 days, need to go back to the immigration and see if they will stamp the additional 45 days. My other question is, does the immigration usually approve the additional 45 days?

TLDR : Answer Summary
Yes, it is possible to switch from an Education visa to what is commonly referred to as a teaching visa in Thailand. The process typically involves cancelling your current Education visa before applying for a COVID visa, which acts as a temporary solution. Once you receive the COVID visa, initially, you may get a 15-day stamp. After this period, you must return to the immigration office to apply for an additional 45 days. Anecdotal evidence suggests that immigration generally approves this extension without significant issues, especially if you were granted the under consideration stamp initially.

That's the ONLY way you'd get a Non-B visa in country(there is no such thing as a 'teaching visa' :O.

You'd get a paper from your school, you'd go cancel your current ED extension at the office that issued it, then you would apply for a covid extension and when you got the extension stamp (NOT the under consideration stamp) you would be able to take documentation from your employer and hopefully apply for a 90 day Non-B <(the b means business) visa at the immigration office

most offices give the 14 day under consideration stamp for covid extensions and you go back to get the rest of the extension inked in when that runs out. I know of no verified reports of anyone being denied a covid extension who got an under consideration stamp

I doubt you have a VISA, I think you're probably on an extension of stay based on education (LOOK at the stamp in your passport).

Nope you can't go from an ED extension straight to Non-B visa or an extension based on employment.

I went over below how you cancel your current extension and how you apply for the covid one before you can apply for the 90 day Non-B visa
