Can you request the 7 day extension denial stamp after already doing a 30 day extension? I'm willing to pay the extra 1900 but could really use that extra 7 days and don't want to overstay.

Okay people listen up, There is NO <- as in NONE, negative repercussions AT ALL with taking the 'application for extension not approved' 7 day stamp to get out of thailand in a week.
It is routinely sold to people who cancel employment or ED extensions here and need time to arrange getting out,
It is routinely sold to people who can't get 30 day extensions on visa waiver entries (Russia, Lao, Vietnam, Hong Kong, Cambodia)
It is routinely sold to people from 17 countries who buy the Visa On Arrival here when they land.
NONE of those people have anything untoward happen to them when they come back, when they go to buy a new visa, when they go to extend a visa.
I would imagine all across thailand that 7 day stamp is given out HUNDREDS of times a week with no ill effects to the passport holder buying it.
and you will get the 7 days to leave Thailand order stamped in your passport.

They can ask for proof you're leaving the country in a week, but no issues at all and you can certainly apply for the 'application for extension not approved' stamp that gives you a week to get out,
Keep in mind it starts the day you apply so you go close to your expiration date now or you lose those days
