Going to go in to Los Angeles Consulate to try to get same day Tourist Visa, preferably Multiple-Entry. Is it possible to do without letter from employer? Also staying with gf so no hotel reservation and haven't booked onward flight yet.

I received my METV a few days ago from the Consulate in LA. They require proof of onward travel and proof that you will leave the country multiple times during the 6 month period. I'm retired so I provided proof of my retirement... they are VERY strict... you can send a message to the consulate via FB messenger...they are very responsive...
It's a super quick process provided your paperwork is in order. I dropped my paperwork off in the morning and my Visa was ready at 3 PM that same afternoon
Did you read the requirements from the website about the 6 month METV? I have found as a rule the LA consulate is not all that flexible from their posted requirements.
no 180 days out...remember you can do land border crossings as well with that visa which do not count against you for the 2 per year...so if you get it now you can stay in Thailand for April 2019...
6 month METV, I applied in Aug 2017 for it, and received it...I bought a RT from NYC - BKK for the airline let me board...but you can buy a ticket on Air Asia/Thai Lion/ Etc out of Thailand...they are liberal on that
just have all the paperwork...bank statement of 6 months with $7,000 in it, onward flight (out of Thailand to any country) 2 passport pics, paperwork filled out and $200...super easy
also, if the terms are considered interchangeable a person may google Thai Embassy requirements when they plan on dealing with a Thai Consulate, and could be irritated and surprised.
Al Olsen so in layman’s terms...the consul works for the ambassador and carries out his/her vision for the mission to be successful while having full autonomy to conduct business as they see fit for their own consulate...
