What documents would I need to prove that I'm working remotely?
And one more thing โ if they reject the application, do you lose the 10k THB fee?

There is no such thing as applying in person anymore. ALL Thai visas are applied for through the online e-visa platform. You must be physically inside of the country whose embassy you are applying through online.

The fact that the e-visa application specifically asks for your CURRENT LOCATION as part of assigning you the embassy, and that one of the questions in the application is PROOF OF CURRENT LOCATION. Many embassies are now requiring extra proof, for example calling you in for an interview after a few days to ensure that not only are in the country, but you are STILL in the country. Many have also started asking for things like a signed and dated letter from the management of the hotel you are staying to prove you are still in the country.

basically they treat an online application in exactly the same way they used to treat in person applications. You apply using the consulate that serves your location (some countries have different consulates for different locations) and remain there until the process completes.
you can apply from the Philippines no problem. One thing document wise they ask for now in cases like yours, with no legal business, is your most recent income tax return. If you are rejected the fee is not returned. It is lost, and a new fee is required to apply again.
All fees are non-refundable. They are very clear on that. And make sure you double and triple check everything about the passport information before submitting. Dozens of reports of cancelled applications due to a typo in the name not matching the passport, or the auto-entered passport number from the photo being incorrect and switching an O for a 0, etc.
