TLDR : Answer Summary
The possibility of converting a visa on arrival to a non-immigrant work visa is uncertain. Visas on arrival generally provide a short duration of stay (15 to 30 days), which may be insufficient for the conversion process. Typically, obtaining a non-immigrant work visa (Non-B) requires applying at a consulate outside of Thailand with documentation from a prospective employer.
With visa on arrival you only get 15 days (30 after October 1st). Almost certainly you won’t have time to convert (not 100% sure you even could). Most instances require you to go to a nearby consulate and apply for a non B visa there with supporting documentation from your new employer.
It will be between your new employer and the immigration department to work out. Getting a non B in Thailand requires vastly more paperwork than one from a consulate.
