If I were to enter Thailand on a tourist visa - would it be possible to transfer to a retirement or working visa (I don't know the correct terminology) whilst there?

If you were to enter thailand on a visa exempt or a tourist visa entry you WOULD be able to convert it to first a 90 day Non-O visa based on retirement and then a year long extension of stay IF you met the proof of financials.
As far as getting a Non-B visa <- the B is business and issued based on employment, whether you could do the conversion in country depends totally on your employers ability to meet the documentation requirements to get that visa issued inside the country
