If I were to enter Thailand on a tourist visa - would it be possible to transfer to a retirement or working visa (I don't know the correct terminology) whilst there?
Thanks in advance :)

TLDR : Answer Summary
Yes, it is possible to convert a tourist visa to a retirement visa in Thailand. Upon entry with a tourist visa, you can apply for a 90-day Non-O visa for retirement, provided you meet the financial requirements for proof. However, converting to a Non-B working visa while in Thailand is contingent upon your employer's ability to fulfill the documentation necessary for the visa.

Go to the Retirement Visa Section for information on requirements, including age restrictions, financial requirements, and necessary documentation.

If you were to enter thailand on a visa exempt or a tourist visa entry you WOULD be able to convert it to first a 90 day Non-O visa based on retirement and then a year long extension of stay IF you met the proof of financials.
As far as getting a Non-B visa <- the B is business and issued based on employment, whether you could do the conversion in country depends totally on your employers ability to meet the documentation requirements to get that visa issued inside the country
