TLDR : Answer Summary
The consensus is that you cannot change from a Non-B work Visa to a tourist visa while you are still in Thailand. It is advised to apply for a tourist visa before entering the country. However, you may have the option to cancel your current extension based on employment and apply for a 60-day COVID extension at the immigration office for a fee, as long as you do so before March 30th.

Why you desire to change to tourist visa?

@Bo **********
they don't want to 'change to a tourist visa' they want to continue to stay by using the covid extension

@Tod ********
Better keep non B visa

they are probably quitting or their contract is running out and if that's the case you can't "keep your Non-B extension" it has to be cancelled,

It is not possible to get a tourist visa inside Thailand

@Hel***
you can't get a tourist visa inside the country, you buy one BEFORE you wing your way here.. :/

However

You might be able to cancel your current extension of stay based on employment with documents from your employer and get a 60 day covid extension at the immigration office for 1900baht though. You'd have to do it before March 30th <- the day the 60 day covid extension program runs out

The Covid extension program will continue after that date.

I've only heard it runs up to mid may. Any news on after that?

@Mark *******
you heard wrong, the program does NOT run until mid may. At this time, the 60 covid extension program runs out on March 30th <- that means the 30th of March is the last day you can apply for a 60 day extension <- and if your current stamp was running out and applied on that date you'd get a stamp until the end of May.. :)

I have the current covid visa that runs to March 28 and I intend to apply again, which will take me up to around May 26.

@Ma**
yep, that's the way to do it :) (y)

Nothing set in stone, but I am pretty much 100% sure the Covid extensions will continue for the rest of 2021.

Easy now with those blanket, broad brush statements
@Da***
:O You don't have a f*cking clue IF the 60 day covid extension program will be extended past the cut off date of March 30th, no one does.. Now is there a good chance it will be extended, yes, BUT have the powerz-that-b <-(as in the thaiz that RUN the country) even mentioned it in the news, nope, not one single word..
