Just after some advice.

I am living in Samui and currently on an education visa that runs out end of April. This means I need to travel back up to Pattaya on Jan 25th to pay 5k, and then again on April 25th to pay 5k. 

Firstly, I don’t really fancy the travel there and back as things currently stand with covid and also I’ve decided to leave at the end of February anyway.

1. Will I be ok to just go to immigration in samui before the 25th January and change to a tourist visa?

2. Will there be an issue abruptly changing from an education to a tourist visa?

You cannot get a tourist visa inside Thailand.

You can't "change to a tourist visa" inside the country.

You'd need to get documents from your school, go to the immigration office that gave you the extension and cancel it before you could apply for a 60 day covid extension.

you can't just have your extension run out and go to the covid extension from it. SO whether you go back to Pattaya to get a new extension OR go back to get this extension cancelled i don't see a way you can do it without going back :/
