TLDR : Answer Summary
Yes, you can apply for a retirement visa via the E-Visa website from the USA, and you do not need to attend an interview at the Thai consulate. However, it's worth noting that there are different types of retirement visas (NON-O and O-A) and certain requirements such as health insurance and financial proof may apply. It's recommended to verify the latest information on the embassy's official website.
NON-O RETIREMENT VISA RESOURCES / SERVICES
  • Go to the Retirement Visa Section for information on requirements, including age restrictions, financial requirements, and necessary documentation.
  • For immediate assistance, contact Thai Visa Centre directly via LINE at @ThaiVisaCentre or Email them.
  • Explore recent discussions by using the Non-O Retirement Visa tag in the search box at the top of the page.
  • Join the Thai Visa Advice Facebook Group to ask your questions, and get advice from others.

You can apply for a non-o or an O-A which you’ll need insurance, police report, doctor certificate and show fund I’d get the non-o and apply for an extension here but you must transfer 800k baht to a Thai bank at least 2 months before applying for the 1 year extension

Why didn't you just check on the Embassy website? All the information is there.

I was told in Thailand that I would have to go to the Consulate in the US for an interview if I applied in the US.

I got mine in California with my only interaction was with the website. That’s it!

Keep in mind there are four different "retirement" visas. Choose the one that works best for you

You can go to Thailand and do the retirement visa here in Thailand or from your home country

Yes you can apply. And no you won't need to go to the embassy. In fact you're not allowed to go to the embassy.
