Iβm from Germany and actually staying in Thailand till 17 Dez. Then I fly to Bali for 7 Days and return to Thailand. In this time I want to apply for the DTV with a Muay Thai course. Is it possible in this time return to Thailand and get the DTV Visa? Or can I come back to Thailand on the 24 Dez, get Visa on arrival and get the DTV E-Visa when I am already there? Thanks for helping

In most countries you cannot break this rules, because you simply cannot enter the country without visa, or they do not use an e-visa system, both preventing entering the country before application is processed.
E-visa is not meant to change the whole process, just to make it easier to apply.

If you're going to apply for a DTV which you do not in Bali but in Jakarta using the online system you have to STAY IN Indonesia until you get the visa approved (or rejected)
You can't apply and then come back to thailand on a free stamp to wait

it's not about Immigration knowing or not, but that the Embassy might at any time request addional prove that you're still IN the country. If you fail to comply, they will reject the application.
