TLDR : Answer Summary
If you leave Thailand and re-enter, you will receive a new 30-day visa exemption stamp, but there are limits on how often you can do this via land borders within a year. Flying back does not count against this limit.

You'll get a new stamp.

Just beware that you can only enter Thailand at a land border without a visa 2 times per year.

So if you're flying back you don't need to worry but if you're coming across a land border it will use one of your 2 times for this year.
