Canadian and planning to get 30 day visa on arrival and extend by 30 more at immigration office. Is it ok that my return ticket is after 60 days, or will the airport want to see just 30 upon entry?

TLDR : Answer Summary
A Canadian planning to enter Thailand on a 30-day visa exemption should be aware that the airline will typically require proof of onward travel within 30 days. While extending the stay by an additional 30 days at an immigration office is often possible, the airlines are cautious and may only accept travel documentation that aligns with the initial 30-day entry period.
First of all, it's visa exempt not visa on arrival. Visa on arrival is only for 15 days where you BUY a visa when you arrive, and only available to a few countries.
Second, the airline will generally want to see proof of onward travel (not necessarily return travel) within 30 days since that's what you'll be entering with. You can buy a cheap throwaway bus ticket to a neighboring country, or a cheap throwaway flight to a neighboring country.
You can also google "Onward travel ticket" to see what other options are available.
