What countries (near Thailand) are offering the fastest processing times?

When it was in-person applications, Taiwan was known for being speedy.

Now that everyone is using the e-Visa system, where should they go?

I have nothing against spending a week in Vietnam, Malaysia, Laos, or Cambodia. I'd still prefer a fast turnaround that's hassle-free. But I'd prefer it NOT to be two weeks or longer!

Sweet! Thanks, I am thinking of flying to Vietnam on a Sunday and coming back on the Saturday, but might make it Sunday to following Tuesday, 10 days, 7 are working. VN knows how to process this quickly.

I don't know if it depends on passport (Citizenship), but Cambodia approved my application within 5 hours.

No place would guarantee it to be approved within one week. Two weeks is the bare minimum, true that a few people has gotten it faster, but those seem to be the exception, not the rule.
