Neither. Waiting until the last minute is crazy. I look at my schedule for the 30 days before the date and find a good day in my schedule, bonus points if there are appointments available on that day so I make an appointment.

Maybe I am confused. Are your extensions being added to your stamp date or from the day you go in? Maybe my entire approach is based on a misunderstanding.
depends on the extension. If you're changing the reason for the extension (for example on a tourist entry but applying for visiting Thai family extension) then it will usually start from the day of application. But if the extension is for the same reason as the visa (tourist extension on a tourist entry) then the days are added to the end. You didn't give any details in your question.
