When should I switch from my Israeli passport to my German passport while exiting Thailand for Australia?

If I'm exiting Thailand to Australia, and my entrance stamp Is on my Israeli passport, and my visa to Australia is on my German passport.

When I need/can "switch" passport?

Ok. The situation is that I want to exit Thailand, after 6 mounts. 2 visas of two mounts, 2 extension from koh samui, and one visa run to mianmar.

All with my Israeli passport.

My visa to Australia is on my German passport, that empty from any stamps. Is it ok that I will book the ticket with my German passport?
