I am looking to stay in Thailand for about 8 months. I'm fine with flying in and out of the country for renewals and such. I also would like to learn some Thai, what visa would you suggest?

TLDR : Answer Summary
For an 8-month stay in Thailand while learning Thai, consider applying for an Education (ED) visa or a Multiple Entry Tourist Visa (METV). The ED visa allows you to enroll in a language school, which can cover your entire duration. Alternatively, the METV gives you almost 9 months of stay versatility, allowing you to enter Thailand multiple times for 60 days each, with the possibility of extending your stay by 30 days for a fee.

The METV gives you almost 9 months and likely easiest answer for your plan.

If you do plan to travel to neighbouring countries, it’s also no problem as you will get 60 days every time you enter Thailand. And each entry can be extended in country for 30 days for 1900 baht. Enjoy!

Well guess you can enter on visa extempt then find a school and they help you convert your visa to Ed and that gives you around 15 months total.
