I am currently on a Non-B visa (90 days) and it expires on April 4th, so I will need to get an extension. I have a list of what I need to get the extension, but now my boss is saying they wont get me anything until the schools open again (which could be months, definitely not by the 4th)

Not sure what I can do in this situation to get the extension and not be on overstay

TLDR : Answer Summary
The user is facing issues in extending their Non-B visa set to expire soon, as their employer is not providing the required documents. Suggestions from the comments include contacting their embassy for assistance and requesting a letter for the visa extension application. They should gather necessary documents and apply for the extension to avoid overstaying.

Contact your Embassy.

Get letter requesting extension.

Take to local immigration office with Extension application..

Without your boss supporting your Extension of Stay application there is not much you can do.

You might ask your Embassy if they can support you with a letter that you are unable to leave the country and use that to apply for an Extension of Stay.
