Flying to KL today. Going to Thai embassy there to get tourist visa. Application requires that I document lodging for entire 60 day period and I have portion of that time covered. But I intend to travel and wander around and make plans as I go. Is there a solution?

just a simple advice: Do not listen to people who tell you, they never check, so just fill in some fake information. OR do not give them more information, OR rent a 18 wheeler truck to bring every possible document you got in live, copied at least 10 times just to be sure.
Meet the requirements as asked, will do the trick to get a visa or Extension of Stay.
KL has check list. They check it and form upon entrance. If you didn't tick the all checkbox nor fill application form properly, they wouldn't let you in..
That is the requirements listed at that consulate, I have seen people denied for not meeting it, AND I have seen people skate thru there with just a weeks lodging proof.
I'd say at least make a booking (that you can cancel later) somewhere to show you ARE indeed staying during the requirements OR chance it.
As a rule the requirements posted on the website for the consulate are what they follow..
