Any advice for a Canadian applying for a standard tourist visa? The visa website appears to be outdated? They are asking me to submit proof of quarantine hotel payment and health insurance. I know neither of these are required anymore. Iβm worried if I submit without these documents my application will be rejected and Iβll lose my application fee. Any Canadians have recent experience with this?

You mentioned "neither of these are required anymore" so I wonder why you worry? I'm Canadian too and will be visiting Thailand this Oct. on Visa exemption for 30 days (I think its exempt for 45 days currently)....
Double check your application. It sounds like you are applying for the Special Tourist Visa (STV). Do not apply for that as the program is ending this month. Apply for the Single Entry Tourist Visa (TR). Go back and check that you selected correctly.
