Having just done the extension process, the IO made a note on my visa stamp that I had health insurance & noted the Policy number. But I'll still bring a copy when I travel just in case, lol.

if you have the Extension of Stay make sure you use the Re-Entry Permit when you like to travel.

As long as you fly out and back in Thailand before the Valid Until date mentioned on the visa, i agree with above advice.
Agree with Annika. Just carry the top page of your insurance policy which details the amount of cover. It depends on the IO on the day. I recently came back in and got stamped in for a year without being asked for Insurance, but I was carrying it just to be on the safe side. The group have had reports where people are stamped in for 30 days and have to then front up at immigration office with proof of insurance to get your full year
