What options does a UK expat have for resolving their visa situation in Thailand during COVID-19?

I'm UK expat who got stuck here because of covid. I have managed to secure work as a teacher and the HR department have been actively trying to resolve my visa situation. Yesterday our HR officer went to immigration in Bangkok and was told I have 2 options. First is to ask my embassy for a letter to ask to transfer me from amnesty to work visa. Second option is just to wait for more announcements closer to September. I've sent off an email to request the letter to my embassy but I'm not holding my breath. Anyone else in similar situation had any luck with things or been told the same?

Leaving the country is not an option as beside applying the non B visa abroad, must buy insurance USD

0 apply entry permit from embassy and convi19 test certificate 72 hours before flying in Thailand and upon arrival still undergo 14 day quarantine

That you do not like the option has nothing to do with the Immigration rules,

I never heard of Embassy letters to be used to go from overstay (amnesty) into a new Non Immigrant B visa inside the country,

Just stay on amnesty and wait until the last moment does personally not sound as a option to me, but each on their own,

Why not as most of the people did in the pre covid era, leave the country, apply for the visa at the Thai Consulate, come back into Thailand and pick up your work permit and start to work,

Yes, I know there are extra conditions to get into Thailand but it is the only option to work legal in Thailand at the moment.
