I am currently in Thailand on a Destination Thailand Visa (DTV) issued by the Royal Thai Embassy in Hanoi. I have accepted employment with a company in Bangkok and need to change to a Non-Immigrant B visa. Could you please advise the procedure for cancelling my DTV and the required documents?

The simplest option is if your local immigration office will allow you to convert your DTV to a Non-B visa but this very much depends on the company you will work with being happy to supply the extensive documentation required to apply for the Non-B visa inside Thailand. Many companies want you to apply for that Non-B outside of Thailand as the paperwork required is much easier for them to provide, if that's the case you need to first cancel your DTV and only the consulate that issued it can do that, they of course might not be willing to do so

To get a B visa the company needs to supply you with their documentation. They also need to apply for a Work Permit at the Ministry of Labour. All being OK the Ministry will issue a letter approving the WP "In Principle". This letter is part of the pack you use to apply for the B visa. Some say the B can be applied for in Thailand but the 2 times I have been employed in Thailand I had to apply for the B at an Embassy outside Thailand. The last one was a large a BOI company. The initial B could not be issued at the One Stop Shop.
