I’m Aussie and did it at the beginning of this year. Apply online in Australia and if you live in Sydney they will give you an appointment to go in and get the visa stamp. If you’re out of Sydney you can post it to them after you apply online. It will explain online. Then just after you arrive here you can go get a 30 day extension. Took me all of 30minutes at the office near chatuchak markets or some people call jj market. Go to the Sydney Thai embassy online.

Why wouldn’t you just do the visa on arrival for 30 days & pay 1900bht for a 30 day extension while your here? So easy to do.

A Tourist visa is valid to enter Thailand for 90 days from the day it's issued.
So you should be fine if you apply about 2 months or 60 days before your trip is planned. This leaves some time to fix any potential issues with your application and also gives you time to accomodate if there's any issues that cause you to delay your trip for a few weeks.
