student visa easiest to get. some nationalities do need to exit some doesn’t. 12-15 months visa. you can apply for muy thai or thai language courses range between 45-60k baht. and every 3 months you need to go to the immigration which took almost day to get visa extension stamp. with 1900 -2000 baht.
Student visa - language, cooking, thai boxing etc... ( there fixed it for grammar nazis ) Can do the visa while in country when you enroll in schools. They will do it for you. Just research the school there are alot of visa mills here that just do the visa and dont really teach much. Its on the student to assure they attend classes as required per the visa
that doesn't meet the OP's specifications as you must exit every 360 days, assuming you extend the 180 days for the additional 180 days allowed one time. Given the cost of that specific extension, many people choose to leave and come back at 180 days. The OP wants a visa where he doesn't have to leave for over 1 year.
