What are the options for extending my stay in Thailand with an arrival visa waiver before switching to a Non O visa?

I am currently in Thailand on arrival visa waiver 30 days expiring 26th July. I had planned to go back to UK next week and fly back to Thailand later in July and enter on the Non O visa I applied for online from the UK Thai Embassy.

I would then convert to retirement. (my husband (US) already has retirement visa. I have UK passport.

Now plans have changed and I am not going to UK until mid September.

So. What do I do?

Can I get two 30 day extensions and then fly out of Thailand mid September?

or do I fly to Malaysia or Singapore or somewhere cheap before 26th July and come back in utilising the Non O?

Any advice would be greatly appreciated.

TLDR : Answer Summary
The user is currently in Thailand on a 30-day arrival visa waiver expiring on July 26 and initially planned to return to the UK before flying back to Thailand on a Non O visa. Due to changed plans, they seek advice on whether they can extend their stay in Thailand, enter through Malaysia or Singapore, and activate their Non O visa.

any way you exit / re-enter would work for activating that eVisa once you get it approved. Book round trip to KL or Singapore, fly in, turn right around and fly back out, present the eVisa PDF when you go to stamp in here in Thailand. You'll be fine.

You don't even have to stamp in to Malaysia (you can stay in the transit area if your flights in and out are tight), just show your boarding pass when you stamp back in to thailand. AND Singapore doesn't stamp people in anymore I think

OR

Bounce out and back by land, BE prepared for them to not have seen an eVisa before though at land crossings because no nearby country's thai consulate uses the system.

If you do go the embassy route avoid Cambodia there the slowest embassy of them all fastest are Laos and Singapore but check as most of the embassy are fully booked until august especially in Vietnam

OP already has visa issued. No need to visit country in any country - I would imagine entering country X is sufficient, then turning around and coming straight back to Thailand with the already-approved visa.

IF you already applied for and got issued the Non Immigrant O visa, you can fly out to any country and come back and use that visa to enter Thailand.

You can not get twice a 30 day Extension of Stay based on tourism, those are only issued once per entry.
