TLDR : Answer Summary
The visa amnesty in Thailand ended on October 31st, and individuals must now have a valid visa extension in their passport. Failure to secure an extension results in overstay fines of 500 baht per day. Some individuals may qualify for a Covid-19 extension, so it is advisable to check with immigration for specific eligibility.

Check with immigration. You may be eligible for a Covid extension.

I can't find anything else in my passport with the date DEC 25 on it. So the extension stamp is just an extension of a visa I have in my passport prior. OK. I'm just trying to make sense of a system that will never make sense.

no a visa or visa exemption gets you into the country. An extension of stay is combined with a certain visa categories to allow you to stay in the country until it expires. Example come in on a non o visa and then get a 1 or 2 year extension of stay. A visa exempt means no visa at all but you can stay for instance 30 days. Everyone confuses visas with extensions of stay. I learned it after I had to start managing them myself.

I would say you are mostly correct. Things get a little more confusing with a multi entry visa but with a single entry visa, your visa is done the minute you walk up to immigration. What you get is a permit to stay stamp in your passport which can vary depending on the type of visa you had. The permit to stay can be extended to new permit to stay at immigration. It is obvious you understand the concepts, I am just trying to help a bit with terminology.

oh so this is a permit to stay stamp. And because of Covid I can extend over and over until borders open up...

I am afraid you are getting about 15 steps ahead of me. I have never personally gotten an extension as I have used multi entry tourist visas. Every permit to stay I have ever gotten on initial entry or subsequent entries have been in the form of a red stamp directly in the passport. In your case I really cannot say what this document in your passport is. In your photo I note a reference to the Kingdom of Cambodia? Perhaps that just sneaked into the photo from another page on your passport? In normal times a permit to stay based on a single entry visa can only be extended one time. The visa amnesty made a mess of all that. I am not sure what is planned regarding amnesty and I am not sure the Thai officials do either. I think it might be time for you to go t Thai immigration to get sorted out.

thanks for that. your mention of "new permit to stay", after the initial "permit to stay", I use the terminology stamped in the passport. Both may be permits of stay, I wanted to clear up the distinction of the first versus the 2nd permit to stay.

yes, 25 December finish!

That's your visa expiry date isn't it?

OK so the visa is the paper folded up and stapled inside the other page.

Amnesty finished on October 31st. Must now have a valid extension in your passport. Anyone who doesn't is on overstay, racking up 500 baht a day in fines!
