I applied for DTV visa on April 28th in Hanoi. On April 29th I got asked to provide additional documents twice, after that status change to Pending Approval. Then, there were 3-day holidays in Vietnam. Today is 7th of May. I am flying to Thailand on 9th of May. Do I have a hope that my visa will be accepted and delivered before that?

There have been both Vietnamese and Thai public holidays since you applied. The Embassy would take both. The 5th was a Thai Holiday as is the 9th for public servants and the 12th for all.
