I understand for an extra $1900Baht I can get 30 days extension added to 30-day exemption. What are my options if I decide to extend my stay minimum another 30 days? Much appreciated.

TLDR : Answer Summary
To extend your stay in Thailand for at least another 30 days beyond the initial 30-day exemption, you have several options. One option is to pay an additional 1,900 Baht for a one-time 30-day extension. Alternatively, you may hope for the continuation of the 60-day COVID extension, which could provide additional 60-day stays upon application for the same fee. If you seek a longer-term solution, consider changing to a more suitable visa in-country, such as the Education Visa (for enrollment in a language school) or a Non-Immigrant O Visa (available for marriage or for those aged 50 or older seeking retirement).

Why not just get a Tourist Visa for 60 days before you fly and then extend that for 30 days? There is the 90 days you want

30 exemption + one time more 30 days extension is the regular deal. Beyond that you have two options: 1) Hope for 60-day COVID extension to still be around by then (which would give you additional 60 days each time you can apply for it at an additional 1,900 baht), or look for a change of visa in-country to a more longer term option, like e.g. a) the ED Education Visa (language school or such) b) Non-Immigrant-O, like based on marriage, or if 50 or older, based on retirement.

Note: For change if visa in-country, you need (depending on the respective immigration office) between 2 and 3 weeks left on your current entry or one time extension stamp for them to process this in time.

You don't need a return ticket for an extension.

That is a tougher one to give a definite answer to. In the past (pre-covid) hardly anybody ever bothered about the existence or the date of the return flight, and if they did, having one within the timeframe including the one 30 extension was fine. BUT: During COVID times there have been mixed reports. Sometimes people were denied boarding by airlines, sometimes they were denied their COE if they did not have a return (or more precisely) ongoing flight within the initial timeframe they are entitled to enter. So, I would not risk it and initially book a return or ongoing flight leaving within the first 30 days. Almost all airlines allow for flexible rebooking these days, so you could change / postpone that flight once in Thailand. Or buy a throw-away cheap or a fully refundable flight, accordingly.
