Did 2 tourist visas, then 1 year ed visa at Mahidol. 

ed visa ends this month. will fly to vietnam and back to thailand.

should I be concerned about getting denied?

Speak to a border run agency. It's possible to do two bounces by land per annum and they won't take you unless they are confident of getting you back in

Possibly. Have your three proofs - 20k baht in cash or equivalent in other currency, accommodation booking and flight out of Thailand in case you are asked.
