My wife and I have lived in Thailand for 3 years, utilising non o-a visa and extensions (retirement), we're both uk citizens.
Our extension was due at the end of September, however my wife had a major operation booked in the UK (following cancer) at the time the extension was due (we'd been waiting 4 years due to NHS wait times so couldn't rearrange 😞).
We have re-entered thailand under visa free a few weeks ago and will return to UK on Dec 02nd for her to have a post operation checkup, coming back to Thailand on 07th Dec. We then have a trip booked to Vietnam to visit family 26th to 30th Dec, and intend returning to Thailand on 30th Dec.
My plan is to apply for an e-visa non-o while in UK (on 3rd Dec), return to Thailand visa free (but with e-visa pending) on 08th Dec.
Go to Vietnam as planned then on returning to Thailand on 30th Dec use the (hopefully) approved 90 day non-o e-visa, extending by a year when appropriate.
Sorry this is such a long message, does what I've written seem sensible and within the rules?

I applied too early for my wife’s 90 day Visa in September, it came in a few days, because the Visa was going to expire before we could travel due to a house sale, I applied for another Visa on the 15th of October and it still hasn’t been approved, I sent them an email and they replied there is an unprecedented amount of applications hence why it’s taking so long, the second Visa was to be able to travel from the 12th of December onwards
One word of warning. You are meant to remain in the location you apply from until the visa process is complete. The Royal Thai Embassy, London reserves the right to request additional documents / interview in person at the Royal Thai Embassy, London, and amend visa categories as deemed necessary as well as reject any application without prejudice.
So you're here now on 60 day visa exempt entries because your current extensions expired when you were out of the country
You will leave Dec 2 and come back to thailand Dec 7th also on 60 day visa exempt entries,
then you will leave, go to vietnam on the 26-30th of Dec and hopefully come back on the 90 day Non-O visa you got online from the thai consulate in the UK (that you applied for when you were there on the 3rd)
Does that about sum it up?
Totally sounds like a workable plan, looks like none of the 60 day visa exempt entries you're coming in on will max out (which is what flags immigrations to look at your entry/stay history)
AND
I would imagine you already have the travel to Vietnam booked so if you were asked when you come back in you could show onward travel (not that I believe you will be asked)
Should work, just depends on if they approve that Non-O visa fast or not from the thai consulate in the UK when you apply, <- because IF they do you have to use it to enter the country when you come back on the 8th (and you could still travel as planned just have to buy a re-entry permit to get out/back without losing the 90 day stamp)
