I’m just reading on the website of the Thai embassy in Vientiane that it’s not possible to apply for any type of visa in person. Is that true? Does everything have to be done online?

TLDR : Answer Summary
Yes, as of March 2024, all visa applications at Thai embassies, including the one in Vientiane, must be submitted online through the e-visa system. Applicants are required to upload all necessary documents online and present a printed form received after submission when visiting the embassy to pay the visa fee.

Yes, you have to upload every document they request online now. I am in Laos and got my non-b visa. I will be back into Thailand this morning.

Every Thai embassy in the world is on the e-visa system and only accepts applications through the online portal. You won't even be allowed onto the embassy property without the printed form that you receive after submitting your application online, which lets you go to the embassy to pay the fee for the visa.

I'm not sure what you are asking. There are multiple sections to upload information. If you need to upload more than one document for a section, use an online tool to combine documents into one file.

that's why much more easier was applying by person. But. Why they just rejected not asking for additional documents?

could you tell me if there is any difference what embassy do you choose as the one which is closest to you? What do you think about my situation? Since I was denied, without stamp in my passport, should I try to get non o visa or they will reject it automatically? It's another 80usd

Being denied entry is not grounds for rejecting a visa application in most cases

I'm in Vietnam now, Hanoi. I was applying online for tourist visa, but there is to choose a reason visit Thai family. I sent all documents, also child birth certificate and invitation letter. But I don't have proper document indicating my current location so I wrote just letter myself. Do you think it was a reason of rejected?

How do you not have documentation showing your location? You got a stamp in your passport when you entered Vietnam. Without that your visa is rejected because you are not proving you are in Vietnam.

Which embassy you choose is dependent on where you are. You must physically be inside of the country where that embassy has jurisdiction. For countries that have multiple embassies/consulates, their website will usually tell you what part of the country that consulate has jurisdiction over. This is from the US for example
