Is it safe to book my trip to Koh Samui before I get my 30-day stamp after my border bounce?

I'm looking to book a flight to Koh Samui (from Chiang Mai) 1 month + accomodation and a 1 month Muay Thai course for the 1st of November. I have to do a border bounce on 26th October (Mae Sai). I haven't done any bounces yet this year (did 1 last year). I am worried about booking everything before I am certain I have 30 day stamp. Can anyone share experiences / reassurances that everything will be sweet? I can show them the funds and even a flight out of Thailand mid December. (I'm on an SETV that I have already extended at immi)
