I got my letter from the Thai embassy granting me 60 day stay in Thailand. Is the print out all I need to show them and make sure they stamp 60 days?

Sounds like you applied for an eVisa at the online website from the thai consulate in your country. They emailed you a PDF file and that is your visa. (y)
You're good 🙂 print it out, hand it and your passport to the officer when you go to stamp in.
When they give the passport back make sure that the stamp says TR60 and that you got stamped in for the 60 days you're allowed
