TLDR : Answer Summary
A UK citizen can theoretically obtain multiple 90-day Tourist Visas (comprising 60 days plus a 30-day extension) in a year, with no official limit. However, applying for back-to-back visas at Thai consulates or embassies may lead to warnings or restrictions on future applications if done excessively. Typically, it’s suggested that only two tourist visas might be issued in a single year.

There is no official limit in how many Tourist Visa's you can have. But when applying back to back tourist visa's at the Consulates or Embassies in the neighbor countries they can put a warning stamp next to the visa. An example of this warning:
As of yesterday entering on a SETV i will be here 1 year on exemptions and setv. Never even a question. I am not working and always have proof of funds.
It's an old rule, honest. There's no limit on tourist visas, there is a limit of 2 visa exempt entries per year at a land border, came in beginning of the year.
