Jomtien is no longer than 30 days before the expiry date. If it's a busy time of year, they have been known to not do it until 14 days before the expiry date.
You can apply for an Extension of Stay at a local Immigration office for a 30 day extension of your Admitted to stay period. Can be done 15 or 30 days before the Admitted to stay date in your passport, depending on office.
Expiry date on the Visa only indicates that the visa is valid till that day, normally 3 months. If you arrive in Thailand before the expiry date you get a 60 day Admitted to Stay period stamped in your passport.
