Noob question here (couldn’t find accurate info on google)

In Bangkok on TR visa which runs out in 3 weeks, want to go extend my extra 1 month and was planning on going today to play it safe. What office do I visit to extend? Does the extra month get added onto the time I already have left?

If you're extending a tourist visa for 30 days the time is added to the end of your current stay.

If however you're applying for the "covid unable to travel extension" which is valid for 60 days, it is issued from the day its approved.
