How do I go about getting a cover letter from a muay thai gym before being out in Thailand?
It'll be in Samui where we'd be living. I've tried to look for this on here but can't find answers.

The gym won’t require any form of meet up prior. You contact them to book a course. Pay the fee and they send you documentation to use with your application for the DTV.
Whether you actually use the gym and attend classes is almost irrelevant.

no meeting with gym necessary at all. Just pay the gym make sure it's a legit one and has proper license and they'll send you all.you need for.proof ✌️

You don't need to meet with them. You enrol in the course, pay the fee, and get the confirmation. That can be done by emailJodie *********
